Babies love the color and flavor of carrots. Choose organic carrots when possible, to reduce nitrate content.
Ingredients
- 1 kg (2 lb) fresh carrots
- water
Preparation
· Remove tops. Wash. Scrape, peel, and scrub well with a stiff brush. Cut into 2.5-cm (1-in.) pieces.
· Stream carrots over boiling water 15-20 minutes or until tender.
· Or, in the microwave, place prepared carrots in covered glass dish with 15-30 ml (1-2 tbsp.) of water. Cook at high power 15-18 minutes. Stir with fork after half the cooking time.
· Allow to stand 3 minutes before pouring into the blender.
· Place 375 ml (1 1/2 cups) of cooked carrots and 80 ml (1/3 cup) of fresh water into the blender. Puree. Repeat with the remaining carrots.
· Pour into ice-cube trays and freeze.
Yield: 2 ice-cube trays full
