zucchini has a sweet and soft flavor. The puree is a pretty spring green. Babies enjoy!
Ingredients
- 750 g (1 1/2 lb) zucchinis (7 to 8 small ones)
- water
preparation
· Wash, scrub lightly, but do not peel. Remove stem and blossom ends. Cut into 1.25-cm (1/2-in.) slices.
· Stream zucchini 10-12 minutes or until tender.
· Or, in the microwave, place zucchini into a covered glass dish. Cook at high power 11-13 minutes. Rotate dish after half the cooking time.
· Allow to stand 3 minutes.
· Put half the cooked zucchini into the blender without adding any water. Puree. Repeat with the remaining zucchini.
· Pour into ice-cube trays and freeze.
Yield: 2 ice-cube trays full
