- 250 ml (1 cup) lentils or peas
or
250 ml (1 cup) red kidney beans or white beans, pre-soaked in water.
Preparation
· In a saucepan, cover legumes with water and cook for about an hour.
· When legumes are tender and can be mashed easily with a fork, remove saucepan from heat. Let legumes cool, then drain.
· Place half the legumes in the blender with 500 ml (2 cups) of fresh water. Puree until smooth. Repeat with the remaining legumes and water.
· Pour into ice-cube trays and freeze.
Yield: 500 to 750 ml (2 to 3 cups)
