1 tbsp vegetable oil 15 ml
1/2 cup diced onion 125 ml
8 oz boneless pork loin chops, sliced 250 g
1 apple, peeled, cored and cubed 1
1 cup shredded Savoy cabbage 250 ml
1/2 cup sweetened apple juice or water 125 ml
(approx.)
1. In a nonstick skillet, heat oil over medium-high heat. Add onion and cook, stirring, until tender but not browned, about 5 minutes. Add pork, turning to brown evenly. Add apple and cabbage; cook, stirring occasionally, for 5 minutes.
2. Pour apple juice into skillet; cover and cook, stirring occasionally, until cabbage and apple are very tender and pork is no longer pink inside, about 20 minutes. Let cool.
3. Transfer to blender and puree on high speed to desired consistency, adding more apple juice if necessary.
TIP
Golden Delicious apples are an ideal cooking apple because they retain their flavor when cooked.
