1/4 cup pitted prunes 50 ml
1/2 cup sweetened apple juice 125 ml
2 tsp olive oil 10 ml
6 oz boneless pork loin chop, sliced 175 g
1/4 cup sliced onion 50 ml
1 apple, peeled, cored and sliced 1
1. In a small bowl, pour apple juice over prunes; let sit for 15 minutes, until slightly softened.
2. Meanwhile, in a skillet, heat oil over medium-high heat. Add pork, turning to brown evenly. Transfer to a plate.
3. Add onion to skillet and cook, stirring, until tender and golden, about 5 minutes. Add apple and cook, stirring, for 5 minutes more. Stir in prunes with juice and browned pork; cover, reduce heat and simmer until apple and prunes are very tender and pork is no longer pink inside, about 10 minutes. Let cool.
4. Transfer to blender and puree on high speed to desired consistency.
TIP
If constipation is an issue, increase the prunes to 1/2 cup (125 ml) and omit the onions.
